Baked Omelettes

This recipe is so flexible and can have ingredients swapped out easily to accommodate your 'morning' taste buds!

Serves: 6

Total Time: 40 min.

Ingredients:
10 eggs
4 cooked turkey bacon strips, chopped into 1/2 inch pieces (optional)
Minced vegetables of choice
1/2 cup cheese
4 spring onions, chopped
Dash of black pepper
Dash of paprika
Dash of cayenne
Hot sauce, to serve (optional)

Directions:
Preheat oven to 350°F / 175°C. Lightly oil a small muffin or casserole pan. Beat the eggs together. Mix in the cheese, spring onions, veggies, and bacon. Carefully pour or spoon into the prepared muffin or casserole pan. Bake in the oven for 25-30 minutes (for the two muffin pans, bake the omelette for 25 minutes; for the small casserole dish, bake the omelette for 30 minutes) until the omelette is puffed up. Serve immediately.
