Makes 36 Energy Bites
Ingredients:
3/4 cup almond butter, softened
3 Tablespoons virgin coconut oil, softened
3/4 cup ricotta cheese
2 teaspoons almond extract
1 cup coconut palm sugar
1 cup unsweetened coconut flakes
3 Tablespoons chia seeds
1/2 cup pecan pieces
1 1/2 cup quick oats
3/4 cup dark chocolate chips
Directions:
Mix together almond butter, coconut oil, cheese, and almond extract. Add the remaining ingredients and mix. Roll into balls. Refrigerate before serving.
Tip:
Add just 1 cup of quick oats and then mix. If the batter is too wet, add the rest.
