Pancake:
1/2 cup rolled oats
1/2 cup 1% cottage cheese
1/2 cup egg whites (See http://www.ener-g.com/faq-egg-replacer for real egg equivalents)
1/4 teaspoon baking powder
1 drop Cinnamon essential oil or Wild Orange essential oil
1/4 cup frozen or fresh raspberries
Raspberry Sauce:
3/4 cup frozen or fresh raspberries
1 Tablespoon agave nectar
1 Tablespoon chia seeds
1/4 cup water
1 teaspoon lemon juice
Directions:
Raspberry Sauce:
In small saucepan, cook all Raspberry Sauce ingredients over low heat, stirring occasionally, until raspberries "melt" and sauce thickens (5 minutes). Set aside to cool for 5 minutes and puree in food processor.
Pancakes:
Mix all ingredients except raspberries in a food processor and blend until smooth. Delicately fold in raspberries. Coat griddle with cooking spray. Cook pancakes at 300 degrees Fahrenheit until set and golden (1-2 minutes per side).
