Butternut Squash Salad

Serves 2-3

Ingredients:
24 oz. butternut squash, cubed into bite-size pieces
2-3 Tablespoons honey
Fresh spinach
1 cup dried cranberries
5-7 slices of bacon, cooked and crumbled
1/3 cup crumbled goat cheese
Balsamic Vinaigrette

Directions:
Preheat oven to 400 degrees Fahrenheit. Place foil over baking sheet. Rinse butternut squash and place on foil-lined baking sheet. Drizzle honey over squash. Bake for 25-30 minutes. While baking, wash spinach and place in serving bowl. Top with cranberries, goat cheese, bacon, and butternut squash.
