Rainbow Fish Cupcakes

Ingredients:
Cupcakes
M&M's or Skittles
Food coloring (blue, green, yellow, and pink)
Wilton candy eyes (or mini marshmallows)

Buttercream Frosting:
4 cups powdered sugar
2 sticks butter, softened
2-3 teaspoons vanilla
1-2 Tablespoons milk

Directions:
Make a batch of cupcakes. Separate the M&M's or Skittles by color. You'll need about 15 pieces for the scales for each cupcake and 2 reds for the fish lips.
Make the Buttercream Frosting by adding powdered sugar to your mixing bowl. Sift it if it is lumpy or mix it on low for 30 seconds to break up any large lumps. Add butter, vanilla, and milk. Start your mixer or beaters on the lowest setting. When butter and sugar are incorporated, then kick your mixer up to medium-high. Once fully incorporated, after a minute or so, stop the mixer and check the consistency and taste. Add more milk and/or vanilla if needed. Mix and check again. When consistency and flavor are right, divide frosting into 4 bowls and add food coloring. Mix until fully incorporated. Frost the cupcakes.
To make the fish scales, start with a row of M&M's or Skittles in the middle of the cupcake, usually a row of 6. Continue adding rows until you fill up half of the cupcake with fish scales. Place the Wilton Candy Eyes for the fish eye on each cupcake or use a mini marshmallow and a dot of black icing. Add 2 red M&M's or Skittles for the fish lips.
You can also make some of the fish scales two-toned by using 2 colors of M&M's or Skittles for the scales instead of one.
