Morning Glory Muffins

Yield: 12 muffins

Ingredients:
2 cups whole wheat pastry flour
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups carrots, grated
1 apple, peeled, cored, and finely chopped
1 cup raisins
1/2 cup applesauce
1/2 cup olive oil
1/2 cup honey
2 teaspoons pure vanilla extract
2 Tablespoons walnuts

Directions:
Preheat oven to 375 degrees Fahrenheit. In a large bowl, combine flour, cinnamon, baking powder, baking soda, and salt. Stir well. In a separate bowl, mix together carrots, apple, raisins, applesauce, olive oil, honey, vanilla, and walnuts. Pour into dry ingredients and mix just until moistened. Lightly spray muffin pan with olive oil cooking spray and scoop about 1/4 cup batter in each muffin. Bake for 20 to 30 minutes. Enjoy!
