Deconstructed Enchiladas

Tortilla
Ingredients:
1 cup flour
1 cup cornmeal
1 Tablespoon shortening (or butter)
1/2 teaspoon salt
2-3 cups water

Directions:
Mix together all dry ingredients, then add water until mixture is very thin. Pour about 1/4 cup batter onto a well-oiled pan. Cook on each side, as you would a pancake. Add water as needed.

Enchilada Sauce
Ingredients:
1-3 teaspoons chili powder
1-2 drops Cumin essential oil
1 Tablespoon flour
1 cup tomato juice
1/2 teaspoon salt
1 teaspoon sugar
1 Tablespoon shortening (or butter)
1/8 teaspoon onion juice or 1 teaspoon chopped onion

Directions:
Heat shortening/butter and flour in saucepan, add tomato juice and other ingredients, and stir. Bring to a boil, and simmer for a few minutes.

Assembly
Other Ingredients:
Hamburger, browned with 5-6 drops Cumin essential oil
Lettuce
Cheese
Tomatoes
Avocado
Sour Cream

Top tortilla with sauce, hamburger, and any other toppings you desire.
