This egg salad incorporates avocado and spinach for a healthy twist!
Ingredients:
7 eggs, hard boiled
4 oz. plain Greek yogurt
2 avocados
1 stalk celery, chopped
1 cup baby spinach
Hot pepper flakes to taste
Whole grain bread, toasted if desired
Directions:
Peel and chop the hard boiled eggs. Mash eggs with yogurt and avocados. Mix in other ingredients. Serve on bread or toast.
