Fruit and Veggie Muffins

These muffins will provide you a balanced breakfast to jump start your day and feel great!

Ingredients:
Wet Ingredients:
2 Tablespoons chia mixed with 6 Tablespoons water
3 Tablespoons oil
1/4 cup unsweetened apple sauce
1/2 cup zucchini, grated
1/2 cup carrot, grated
1 banana, mashed (about 1/2 cup)
4 Tablespoons maple syrup

Dry Ingredients:
1/4 teaspoon sea salt
1 1/2 cups whole grain flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg

Add Ins:
1/4 cup pumpkin seeds
1/4 cup chopped dates or raisins

Directions:
Combine the wet ingredients in one bowl and the dry ingredients in another, being sure to mix each well. Add the dry ingredients to the wet ingredients in portions and stir well in between portions until all is just combined. Stir in the dried fruit and seeds, being sure not to over mix. Scoop batter into 8 lined muffin cups and bake in a preheated 375 degree Fahrenheit oven for 20 to 25 minutes or until the tops of the muffins spring back when lightly touched. Let sit for a few minutes prior to serving.
