Green Pizza

This pizza tastes better than it sounds! It can serve as a main dish or a side.

Ingredients: 
For the Pizza Base:
2 1/2 cups whole wheat flour
1/4 cup rye flour
1/4 cup cornmeal
1 Tablespoon honey
1 teaspoon salt
2 teaspoons instant active dry yeast
1 teaspoon olive oil
1 cup warm water (110 degrees)

For the Green Chutney/Pesto:
1 cup basil
1 cup coriander
3 cloves garlic
1 green chili
3 Tablespoons olive oil
3 Tablespoons pine nuts
1/2 teaspoon salt or to taste
Few turns of pepper

Other:
Olive oil
Salt to taste
Italian seasoning
Yellow and green zucchini, thinly sliced

Directions:
For the Dough:
Add the yeast in warm water with honey and let it foam for 5 minutes. If it doesn't foam, chuck it and start a new batch. Once it rises and foams, with a paddle attachment in your mixer, add the flour, salt, oil, and the yeast mixture. Run the mixture on low until it forms a ball. Let it run for 10 more minutes for the dough to activate the gluten. Alternatively, you can work the dough by hand, which will take some time. Let rise in a warm place for 2 hours.

For the Green Chutney/Pesto:
Add all the ingredients and grind to a thick paste. Set aside.

Putting it together:
Preheat your oven to 400 degrees Fahrenheit. Divide your pizza dough into 2. Roll the half to a thin sheet. Spread the green chutney over it in a thin layer. Arrange the zucchini in a pattern all around. Brush a little olive oil on top and sprinkle with a little salt and Italian seasoning. Bake for 10 minutes or until lightly brown on top.

Note: If you don't have rye or cornmeal, you can add the equal quantity of whole wheat flour.
