Grilled Citrus Salmon

Enjoy the flavors of lemon, lime, and orange in a citrus-y marinade that will give you the sweet and tangy flavor of this perfectly grilled dish!

Ingredients:
4 (6 oz.) pieces of salmon
1/2 cup orange juice
1/4 cup lemon juice
1/4 cup lime juice
1/4 cup sugar free orange marmalade
2 garlic cloves, minced
3 Tablespoons soy sauce
1 Tablespoon arrowroot powder
1 Tablespoon water
Salt and pepper to taste
Cedar planks (optional)

Directions:
In a medium saucepan, whisk together juices, marmalade, garlic, and soy sauce. In a small bowl, whisk together arrowroot powder and water. Slowly stir into the marinade and bring to a boil over medium high heat until the mixture starts to thicken. Remove from heat. Lay salmon skin side down on cedar planks (or well oiled grill) and season with salt and pepper. Divide the marinade into 2 halves and place one half in the refrigerator. Brush half of the marinade onto the tops of the salmon and grill over medium high heat for 12 to 15 minutes. Transfer the salmon to plates and brush with the reserved marinade on top.
