Holiday Cranberry Cookies


Ingredients:
1/2 cup butter, softened
1 egg
1/2 cup brown sugar, packed
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon kosher or sea salt
1 2/3 cups rolled oats
1/2 cup dried cranberries
1/2 cup white chocolate chips

Directions:
Preheat oven to 350 degrees Fahrenheit. Add butter, egg, brown sugar, and vanilla to blender and secure lid. Blend on Low (speed 1) for 15 seconds. Add flour, cinnamon, baking soda, salt, and 1 cup oats to blender and secure lid. Blend on Low for 10-15 seconds. Using rubber scraper, fold in remaining oats, cranberries, and chocolate chips. Spoon Tablespoon size balls onto parchment-lined cookie sheet and bake for 10-12 minutes.
