Ice Cream Log

Ingredients:
Cake of choice
1 quart vanilla ice cream, softened to the consistency of thick milkshake

Flavor options: 
Peppermint essential oil
Wild Orange essential oil
Lime essential oil
Lemon essential oil
Cinnamon essential oil
Cardamom essential oil
Chocolate chip pieces
Sprinkles

Directions:
Prepare desired cake recipe as directed. Instead of using a 9 x 13 inch pan, prepare a jelly roll pan with nonstick spray. Place parchment paper 2 inches larger than pan on all sides, and spray nonstick spray on parchment paper. Spread cake batter thinly onto the paper.

Bake on a higher oven rack for 10-12 minutes at 350 degrees Fahrenheit. Remove pan. Lift cake out of pan by holding all corners of parchment paper, let cool.

While cake is cooling, make ice cream mixture. Into softened ice cream, add your desired flavoring to taste. Spread ice cream evenly on top of cooled cake mixture. Roll cake and ice cream using parchment paper, removing paper as you roll. Place roll onto a parchment paper lined pan and freeze. Once frozen, you can wrap with plastic wrap to store in freezer. Slice and serve.
