Mango and Mushroom Chicken

Serves: 4

Ingredients:
2 Tablespoons olive oil
1 onion, chopped
2 garlic cloves, chopped
Salt and pepper
4 boneless, skinless chicken breast portions
10 wild tomatoes or cherry tomatoes
4 white mushrooms, chopped
1/2 mango, chopped
1 cup vegetable stock
4 Tablespoons tomato paste
1 teaspoon cilantro for garnish, chopped
1 teaspoon chili flakes (optional)

Directions:
Add onion and garlic to a pan coated with olive oil and let cook for about 5 minutes over a medium flame. Season both sides of the chicken breasts with salt and pepper. Move the onion and garlic to the side of the pan and add in the chicken. Let the chicken brown on one side, then flip the chicken over. Add the mushrooms, mango, and tomatoes. Add in the vegetable stock and tomato paste and stir. Let it simmer covered for about 20 minutes over a low flame. Uncover and stir until most of the liquid is absorbed. Sprinkle with chili flakes and cilantro. Enjoy with brown rice, naan, broccoli, or simply by itself!
