Mixed Berry Fruit Leather

With a little prep, these can go a long way!

Total Time: 3 hours 30 min.

Ingredients:
2 cups mixed berries
1 Tablespoon lemon juice

Directions:
Preheat oven to 170 degrees Fahrenheit. Line a jelly roll pan (a baking sheet with sides) with parchment paper or a silicone baking sheet. Blend ingredients together until smooth. If desired, strain to remove seeds. Pour the mixture into the pan and use an offset spatula to create a thin, even layer. Bake for 1 1/2 hours and rotate the pan. Bake for another 1 1/2 hours or until the fruit leather is no longer sticky. Slice into desired size pieces (kitchen cutting shears work well). Wrap in parchment or wax paper and store in an airtight container.

Notes: This recipe easily doubles. Yield is determined by how you cut the pieces.
