Mushroom & Pepper Quesadilla

Ingredients:
1 (6 inch) spinach tortilla
1/4 cup Monterey Jack cheese, shredded
1/4 cup red bell pepper, sliced
1/3 cup mushrooms, sliced
1/4 cup acovado, diced

Directions:
Heat a nonstick skillet over medium heat and spray skillet with nonstick spray. Place tortilla in skillet. Top tortilla with cheese, pepper, and mushrooms. Fold in half and cook for 3-4 minutes per side until cheese is melted and tortilla is golden. Top with avocado before serving.
