Peanut Butter & Jelly Sandwich

Ingredients:
Bread:
1/2 plantain, peeled
2 eggs
1 Tablespoon coconut oil

Homemade No Sugar Added Jelly:
1 cup frozen berries
2 teaspoons gelatin

Nut Butter:
1-2 Tablespoons peanut butter

Directions:
Bread:
Preheat oven to 350 degrees Fahrenheit. Place plantain and eggs into blender. Spread 1/2 Tablespoon coconut oil in the bottom of 6 inch circle pan. Blend the other 1/2 Tablespoon coconut oil in blender with eggs and plantain. Pour batter into pan. Bake for 15-18 minutes.

Jelly:
Heat small saucepan over medium heat. Place berries into pan and warm. Once berries are no longer frozen, pour into blender. Blend berries with gelatin.

Assemble sandwich:
Cut bread in half. Spread peanut butter on one side of the bread. Spread jelly on top of peanut butter. Place the other half of bread on top.
