Pear and Arugula Salad with Goat Cheese and Walnuts

Makes 4 servings.

Ingredients:
4 Tablespoons olive oil
Juice of 1 lemon
Salt and freshly ground pepper
2 ripe pears such as Bartlett or Anjou, cored and thinly sliced
6 oz. arugula
1/2 cup goat cheese, crumbled
1/3 cup walnut halves, lightly toasted

Directions:
In a small bowl,whisk together olive oil and lemon juice. Season to taste with salt and pepper and set aside. Place sliced pears in a large bowl. Whisk the olive oil and lemon juice again, and pour over the pears, tossing gently to combine. Add arugula and toss to evenly distribute the ingredients. Season to taste with salt and pepper. Arrange on a large platter or divide evenly between 4 salad plates. Garnish with the crumbled goat cheese and walnuts.
