Simple Taco Salad

A little prepping goes a long way with this recipe. Eat as a side dish or for lunch!

Serves: 4

Ingredients:
Taco Meat:
1 lb. ground meat of your choice
2 teaspoons chili powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon garlic powder
1/2 large onion, diced
2 teaspoons coconut oil
Sea salt to taste
Pepper to taste

Simple Salsa and Salad:
4 tomatoes, diced
1/2 red bell pepper, diced
1 teaspoon lime juice, freshly squeezed
Large handful of fresh cilantro, finely chopped
Sea salt to taste
Pepper to taste
1 large head of romaine lettuce

Cilantro Garlic Dressing:
1/2 cup mashed avocado
1 teaspoon Dijon mustard
1 large clove garlic, minced
1 Tablespoon lime juice, freshly squeezed
Large handful of fresh cilantro, finely chopped
Sea salt to taste
Pepper to taste

Directions:
Taco Meat:
In a large skillet, heat the coconut oil until melted. Add the onion and saute for 5 minutes. Add the chili powder, paprika, cumin, coriander, and garlic powder. Stir until the onion is evenly coated. Add the meat, salt, and pepper. Cook until the meat is no longer pink. Remove from the burner and set aside.

Salsa and Salad:
In a large bowl, combine all ingredients except romaine lettuce and mix well. Clean and cut the lettuce into small shreds.

Dressing:
In a bowl, combine all ingredients and mix well. Add more salt and/or pepper as needed.

Putting it together:
Add a generous handful of romaine lettuce to a plate. Sprinkle on the taco meat, then the salsa, and finally drizzle with the dressing.
