Southwest Guacamole

Ingredients:
2 small avocados, peeled, pitted, and divided
2 scallions, trimmed and halved
1/4 red pepper, seeded and roughly chopped
1/4 small onion, roughly chopped
1 clove garlic, halved
1 (15 oz.) can unsweetened corn
1 Tablespoon hot sauce
1/3 cup cilantro
3/4 teaspoon sea salt
1 Tablespoon fresh lime juice
1/2 teaspoon ground black pepper
1/2 cup shredded pepper jack or cheddar cheese

Directions:
Add all ingredients EXCEPT 1 avocado to blender and secure lid. Press "Pulse" 4 times. Add remaining avocado and secure lid. Press "Pulse" 3-4 more times or until desired texture is achieved.

Variations:
To add more heat, add jalapeno pepper.
For a dip higher in protein, fold in 1 cup cooked black beans.
