Sweet Potato Pizza

Ingredients:
Crust:
2 large sweet potatoes
1/2 teaspoon minced garlic
1/2 teaspoon salt
2 egg whites

Toppings:
Pesto sauce
Mozzarella cheese
Artichoke hearts
Tomatoes

Directions:
Preheat oven to 425 degrees Fahrenheit. Cook sweet potatoes until soft. Mash until smooth (should yield 3 cups). Add garlic, salt, and egg whites. Spread mixture onto pizza stone. Bake crust for 20 minutes. Remove from oven and add desired toppings. Return to oven and bake for 12 minutes. Broil for additional 2 minutes to crisp the cheese.
