Taco Salad in a Jar

Cilantro-Lime Dressing
1 Tablespoon apple cider vinegar
Juice from one lime
1/2 cup fresh cilantro
1/4 cup nonfat plain Greek yogurt
1 teaspoon honey
Pinch of salt

Directions:
Blend until smooth. Pour into bottom of quart-sized Mason jar.

Salad
1/4 cucumber, diced
1/2 cup black beans
1 Roma tomato, diced
1/4 cup corn
1/4 cup red pepper, diced
3 cups spinach
1/4 avocado, diced
1 Tablespoon cheddar cheese, shredded

Directions:
Layer ingredients in jar in the following order: dressing, cucumber, black beans, tomato, corn, red pepper, greens, avocado, and cheese. Fill jar to the top and seal with lid. Store in fridge for up to five days.
