Zucchini Muffins

Great for breakfast and a morning snack - without the sugar!

Ingredients:
1 egg
1/2 cup olive oil
1/3 cup honey
1 cup shredded zucchini
1 teaspoon vanilla
1 teaspoon cinnamon and/or pumpkin pie spice
1 1/2 cups whole wheat flour (brown rice flour would also work)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup loosely packed raisins (optional)
1/2 teaspoon sea salt

Directions:
Preheat oven to 350 degrees Fahrenheit. Mix the olive oil, honey, zucchini, and vanilla in a medium bowl. Stir in the egg. Stir in the flour, cinnamon, baking powder, baking soda, and sea salt. Mix until well combined. Fold in raisins. Spray 12 muffin tins with cooking spray. Pour batter into muffin tins. Bake about 18 minutes or until browned and a knife comes out clean.
