Ingredients:
Crust:
6-7 cups flour
2 packages yeast
2 teaspoons oregano
2 teaspoons thyme
1 teaspoon salt
2 cups very warm water
4 Tablespoons olive oil
2 eggs
Sauce:
4 Tablespoons oil
2 medium onions, chopped
2 garlic cloves, minced
4 teaspoons firmly packed brown sugar
2 teaspoons basil leaves
1 teaspoon salt
16 oz. tomato sauce
Suggested Toppings:
Green bell pepper
30 slices pepperoni
4 cups cheese
1 small can pineapple
Directions:
Crust:
In a large bowl, combine 1 1/2 cups flour, undissolved yeast, oregano, salt, and thyme. Gradually add water and oil to dry ingredients. Beat 2 minutes at high speed, scraping bowl occasionally. Add eggs and 1/2 cup flour. Beat 2 minutes at high speed. With spoon, stir in enough remaining flour to make dough soft. Knead on floured surface until smooth, about 6 minutes. Place in greased bowl, turning to grease top. Cover. Let rise in warm location until doubled in size, about 30-45 minutes.
Sauce:
In medium sized saucepan, cook onion and garlic until tender, stirring often. Stir in remaining ingredients. Simmer covered, 15-20 minutes, stirring often.
Punch down dough. On floured surface, roll dough to fit greased 10 x 15 inch baking sheet (or 2 large round pizza pans). Spread sauce evenly. Add toppings. Cover. Let rise about 20-30 minutes. Bake at 400 degrees Fahrenheit for 25 minutes.
Serve with breadsticks such as Homemade Olive Garden Breadsticks.
